12 herring fillets
1 & 1/2 c. water
1 & 1/2 c. vinegar
1 & 1/2 c. sugar
15 peppercorns
1 - 2 large onions

Directions:
Slice onion
Soak herring overnight or several hours in cold water. Change water one or two times, if it is really salty.
Boil together vinegar, water, sugar and peppercorns for 5 minutes. Chill.
In a jar, layer the herring and onion, pour liquid over to cover.
Refrigerate

Sille', as it is called in Finland, was a favorite at Christmas. The first Christmas Franny had with the Fullers, he tried the pickled herring and loved it. Grandma asked him if he wanted crackers to go with it, and his reply was "no, it is good just the way it is".
