1/4 cup butter
1/2 cup brown sugar, packed
1/2 tsp vanilla
1 egg
1/2 cup corn syrup

12 tart shells (use any pie crust recipe for shells, or buy premade shells)

Directions:
Directions:
In bowl, cream together butter, sugar and vanilla. Beat in egg and corn syrup. Pour filling into tart shells about 3/4 full.

Bake in 375º oven for 15-18 minutes or until lightly browned.

When I was a little girl, we visited my maternal grandparents in Canada often. Sometimes we girls spent the Summer living with them. My grandmother made something she called "taffy tarts", which were a simple creation that she had no recipe for, and just dumped ingredients in a bowl. I thought they were the best ever, and so looked forward to them. Over the years I tried to find recipes to duplicate them, but never did. This recipe is the closest I have ever come, and I have no idea where I got it, but here's what it says about them.

"These tarts are uniquely Canadian. There are theories whether they were adapted from Southern Pecan Pie, old fashioned sugar pies, or maple syrup, backwoods or vinegar pies" Squabbles arise whether or not the tarts should be runny, eggs beaten or not, or how the tart pans should be filled".

Grandma had an old wood stove, and no running hot water, but these taffy tarts seemed to take no effort on her part, and were always wonderful.
