1 cup butter, softened. (2 sticks).
1 3/4 cups granulated sugar.
1 egg.
1 tsp vanilla.
2 tsp lemon extract.
2 teaspoons of lemon zest. ( I zest a whole lemon).
1 tsp baking powder.
1/2 tsp of salt.
3 cups of flour.

Directions:

Heat oven at 350.
In a bowl mix flour and baking powder and salt.
In mixer add sugar lemon extract, lemon zest and egg, vanilla. Mix on low speed for 5 minutes. Add dry ingredients slowly and mix for a few more minutes.
Roll 2 inch balls in granulated sugar, then place on cookie sheets with parchment paper. Bake for 12 minutes. DO NOT OVER BAKE. LET COOL THEN YUMMMMMMMY!
