1 1/4 cups margarine (2 ˝ sticks) softened
3/4 cup packed brown sugar
1/2 cup sugar
1 egg
1 tsp. Vanilla
1 1/2 cup unsifted flour
1 tsp. Baking soda
1/2 tsp. Salt
1 tsp. Ground cinnamon
1/8 tsp. Nutmeg
3 cups quick or old-fashioned oats
2 cups Ghiradelli semi-sweet chocolate chips or double chocolate
1 cup chopped walnuts (optional)

Directions:

Heat oven to 375°. Cream margarine with sugars until light and fluffy. Beat in egg and vanilla.

Stir in flour baking soda, salt and spices; add to creamed mixture, mixing well. Stir in oats. Fold in chocolate chips and walnuts. Drop by rounded teaspoon onto un-greased cookie sheets.

Bake 8 to 9 minutes for a chewy cookie, 10-11 minutes for a crisp cookie.

Cool for 1 minute on cookie sheet, then transfer to wire cooling rack.

Store in a tightly covered container.

Makes about 6 dozen 2 inch cookies.
