1 cup shortening
1 cup brown sugar
1 egg
1 tsp vanilla
1 tsp baking soda
¼ boiling water
2 cups all-purpose flour
½ tsp salt
2 cups rolled oats
½ cup coconut
1 pkg butterscotch chipits (about 1 ½ cups)

Directions:
Directions:
Cream shortening and sugar. Add egg and vanilla. Beat well. Dissolve baking soda in boiling water. Cool. Blend dry ingredients in separate bowl; including chipits. Add to wet ingredients; along with the baking soda water. Mix well. Drop with a spoon onto lightly greased cookie sheet. Flatten with a fork dipped in white sugar. Bake at 350ºF for 12-15 minutes. Don't overbake!
