2 quarts apple sauce or dried apples
2 tsp cinnamon, divided
1 1/2 tsp nutmeg, divided
2 1/2 tsp all spice, divided
3 cups sugar, divided
8 cups sifted flour - self-rising
1 cup shortening
1 cup warm molasses
1 cup brown sugar
4 eggs
1 tsp apple spice
1 T vanilla
1/2 cup milk

Directions:
Cook 2 quarts apple sauce. Blend in 1 tsp cinnamon, 1 1/2 tsp nutmeg, 1 1/2 tsp all spice and about 2 cups sugar and set aside. Sift 8 cups self-rising flour (as for biscuit dough) with the following: 1 cup shortening, 1 cup warm molasses, 1 cup white sugar, 1 cup brown sugar, 4 eggs, 1 tsp cinnamon, 1 tsp all spice, 1 tsp nutmeg, 1 tsp apple spice, 1 T vanilla, 1/2 cup milk. Make in a stiff dough. Pinch off about 1 cup at a time and roll to about 1/4 inch thick. Spray cake pan very well. Put in a 9 in cake pan. Bake at 400º until brown. Turn out on paper towel and let cool and then put on plate and put apple sauce on layers. This will make about 2 cakes with 7 layers each.
