2 eggs
1 c granulated sugar
1 c chopped walnuts or pecans
1 c shredded or flaked coconut
1 c chopped dates
1 tsp vanilla
granulated or icing sugar
candied cherries (optional)

Directions:
Directions:
Beat eggs slightly in 1 1/2 qt glass casserole. Mix in sugar, nuts, coconut and dates. Microwave on high power uncovered for 5 to 6 min or until bubbly and thickened stirring once or twice. Stir in vanilla. Cool completely. Form mixture into balls by dropping rounded teaspoonsful of mixture into sugar and coating with sugar while pressing into a ball. For surprise centers, roll the mixture around candies cherries. Let stand uncovered to set.
