Ingredients: Cake: 2 1/2 C Cake Flour 3 tsp Baking Soda 1/4 tsp Salt 1/2 tsp Ground Cloves 1/2 tsp Nutmeg 1 1/2 tsp Cinnamon 1/2 C Liquid Shortening 1 1/2 C Sugar 2 Eggs 1 C Chopped Nuts 1C Chopped Dates 1- 16oz. Jar applesauce
Icing: 5-6 Tbs. Brown Sugar 2 Tbs. Cream 1/2 Stick Butter Powdered Sugar

Directions:Cake: Sift flour. Add soda, salt and spices and sift three times. Set aside. In a another bowl mix shortening and sugar until creamy. Add eggs and beat well with a mixer. Fold in nuts and dates to sugar mixture. Add flour alternating with applesauce in small amounts until smooth. Line angel food cake pan, oil well. Pour cake mixture into cake pan and bake in a pre-heated 325º oven for 1hr. 35min. or until toothpick comes out clean. Cool completely.
Icing: Bring brown sugar, cream and butter to a low boil. Slowly add powdered sugar until thick enough to spread onto cooled cake while icing is still warm. Press pecan halves into icing while still warm to decorate top of cake. |

Notes: Grandma Helen G. Addison used to make this cake for the Robbins family every Christmas. She shared her recipe with me in the early 1990's. Hers was, of course, always better than any attempt I've ever made to date.
