Dough

2 cups flour
1 tsp. salt
½ tsp. baking soda
½ cup brown sugar
¾ cup shortening
1 egg
¼ cup molasses
1 cup rolled or old-fashioned oats

Filling

1 cup canned pumpkin
½ cup sugar
¼ tsp. nutmeg
½ tsp. cinnamon
½ tsp. ground ginger

Directions:

Mix filling ingredients and set aside. Combine flour, baking soda, and salt. Add sugar, shortening, egg, and molasses. Stir until smooth. Blend in oats.

Roll out dough on floured board to ⅛ inch thickness. Cut into 48 circles with a 2½ inch diameter. (The top of a drinking glass works well for this).

Place half of circles on an un-greased cookie sheet. Top each with ½ tsp. of filling, spreading lightly in center. Place remaining circles on top, sealing edges with a fork. Bake at 375º for 12-15 minutes.
