Mincemeat Cookies Recipe

1 cup butter- softened
1 1/2 cups sugar
3 eggs
3 1/4 cups prepared mincemeat

3 3/4 cups flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/4 tsp. salt
1 cup chopped pecans

Directions:
Directions:
Mix dry ingredients- set aside.
Cream butter & sugar. Add eggs. Add mincemeat. Add dry ingredients.
Drop by tsp. onto greased baking pan (or parchment paper)
Bake 350º for 14-16 minutes or until edges are browned.

FROSTING;
1 1/2 cups brown sugar
3/4 butter, cubed
1 cup icing sugar
6 Tbsp of half & half cream
1 tsp. rum extract
9 dozen pecan halves (optional)

Combine butter and sugar- bring to a boil on medium heat- boil 6-8 minutes. Stir a couple of times,until sugar is dissolved.
Add icing sugar, cream & rum extract. Stir until smooth.
Frost each cookie and top with a half a pecan.
