1/2 c shortening
3/4 c brown sugar, 3/4 c white sugar
1 1/2 c pumpkin
1 teas vanilla
2 1/2 c flour
1 teas baking powder, 1 teas baking soda,
1 teas salt, 1 teas nutmeg, 1 teas cinnamon
1/2 c chopped walnuts, 1 c chocolate chips

Directions:

Set oven to 350º. Grease cookie sheets. In large bowl, cream together shortening & sugar till light and fluffy. Beat in egg, stir in pumpkin & vanilla. Combine flour, baking powder, baking soda, salt, nutmeg, cinnamon; gradually mix into creamed mixture. Stir in walnuts & chips. Drop dough by teaspoonfuls onto cookie sheet. Bake 15 minutes or until light brown. Cool on wire racks.

Emily makes the best chocolate chip cookies and I would never try to make them and would prefer she make them for us. We love when she sends them to NC. But I felt it was safe to try to make these cookies myself. I use the Kitchen Aid to whip them up. Make a large batch.
