Grandma's Classic Lasagna Recipe

1 med. onion, chopped
3 cloves garlic, minced
2 Tbsp olive oil
2 lb lean ground beef
1 - 8 oz can tomato sauce
1 - 5 1/2 oz cans tomato paste
2 tsp salt
1/2 tsp dried rosemary, crumbled
1 can sliced mushrooms
1 tsp dried oregano
3/4 c water
1 egg
1 pkg frozen spinach, thawed and squeezed dry
1 c cottage cheese (or ricotta)
1/3 c grated parmesan cheese
1 - 16 oz package lasagna noodles
1 - package shredded mozzarella cheese or Italian Blend

Preheat oven to 350º.

Saute onion and garlic in 1 tbsp of the olive oil. Add the ground beef and cook until browned and no pink remains. Add the tomato sauce, tomato paste, 1 tsp salt, oregano, rosemary, and water. Simmer 15-30 minutes to blend flavours.

Meanwhile, mix egg with cottage cheese, 1 Tbsp of the oil, and 1 tsp salt.

Cook lasagna noodles, al dente, as per package directions.

Alternate layers in a 9" x 13" baking dish: 1/3 of the sauce, 3 noodles (more to cover gaps), 1/3 cottage cheese mixture, and 1/3 mozzarella blend. Repeat twice more for a total of 3 layers. Finish with remaining cheese and Parmesan cheese.

Bake in oven for 20-30 minutes until cheese is melting and bubbling. Let stand on counter 10 minutes before serving.

This is straight from my grandma's books. My family loves this so much that my grandpa used to bribe me to make it and I do not need a recipe either anymore - I know it by heart. I never, never make just one - I always atleast triple the recipe and then some to make three or more lasagnas and make them each cheesier and meatier. This is my absolute favourite recipe in the world!!!!
