2 packages (3.5 ounces) Lime Jello
1 package (8 ounces) cream cheese, softened to room temperature
1 can crushed pineapple in juice, drained, reserving 1 cup of pineapple juice
1 cup walnuts, chopped
1 pint heavy whipping cream
1 cup boiling water

Drain the pineapple; reserving 1 cup of the pineapple juice. Boil the 1 cup of water with the 1 cup pineapple juice.

Mix the Lime Jello with the boiling water/juice mixture until completely dissolved.

Mash the cream cheese to desired consistency. (Grandma Nedostup preferred it chunky; I prefer it smooth.) Add to the Jello water/juice mixture and blend with mixer until the green Jello turns "creamy."

Chop the walnuts to desired coarseness. Mix chopped nuts with the drained, crushed pineapple.

Pour the pineapple/nut mixture on the bottom of a 9x13-inch Pyrex dish. Pour the Jello/cream cheese mixture over top. With a fork, stir both together mixing well. Place in the refrigerator until partially chilled and slightly thickened.

Whip the 1 pint of whipping cream on high speed of mixer until it peaks and becomes fluffy. Fold the whipped cream into the Jello/pineapple/nut mixture that is partially thickened.

Refrigerate for 2 more hours until solid.

Grandma Nedostup used to have her lady friends over for Bridge Club. This was one of the dishes that she always prepared for her friends. We could not wait until her friends left so that we could get some of this delicious "Green Jello Salad."

As I mentioned, Grandma used to love it with the cream cheese with small chunks. She only softened the cream cheese for about an hour. I preferred it blended better with the Jello (more of a creamier mixture) so I soften my cream cheese longer before mixing it, and I mix it better with my mixer. All a matter of what you prefer...
