CREAM:
1 cup margarine or butter
3/4 cup sugar
1 egg
1/2 tsp. lemon extract
1 tsp. vanilla
1 cup cooked mashed carrots
ADD:
2 cups flour
2 tsp. baking powder
1 tsp. salt

FROSTING:
Blend until smooth:
2 cups powdered sugar
2 T. butter
1 T. Grated orange zest
2 T. fresh squeezed orange juice

Directions:
Drop by teaspoons on to sprayed cookie sheet. (Dough will be sticky.) Bake at 375 degrees for approximately 10 minutes. Frost with orange icing.

Personal Notes:
You can frost them warm or cold depending on how you like the icing to set up. Also, it is much easier to grate carrots and cook them in a skillet with a little bit of water. They cook faster and they are already mashed and ready to use when done.
