1 1/4 c almond flour (almond meal works too)
3/4 c finely shredded unsweetened coconut
1/2 tsp baking soda
1/2 tsp salt
1/4 c butter, softened
1/4 c coconut oil
1/2 c splenda (or equivalent other sweetener)
2 tsp molasses
1 egg
1/2 tsp vanilla
3 oz sugar free chocolate chips

Preheat oven to 325º. Lightly grease a 10" oven proof skillet.

Whisk together almond flour, coconut, baking soda and salt. In another bowl, beat butter and coconut oil until well combined. Beat in sweetener and molasses. Beat in egg and vanilla. Stir in almond flour mixture and chocolate chips. Spread dough in skillet and bake 18-20 minutes, until light golden brown. Cookie will be very soft and puffed when removed from oven (it won't seem cooked through). Let cool at least 15 minutes before serving.
