Apple mix
2 tbls salted or unsalted butter
4 large apples, peeled, cored, sliced- any kind or mixed. I like to use granny smith, honey crisp, gala
2 tbls dark brown sugar
2 tsp cinnamon

Batter
3 eggs
1 tsp granular sugar or stevia
½ cup milk
½ cup all-purpose flour
½ tsp baking powder
1 tsp vanilla
Pinch of salt

Topping
1 tbls brown sugar
2 pats of butter ā€“ cut into pieces

Directions:
Directions:
Preheat oven 450 degrees
Use a 10 inch¯ skillet with 2 inch¯ rounded sides that can be put in the oven

Melt butter in skillet, add apples, cinnamon, and dark brown sugar. Mix and cook apples on low to medium heat approximately 10 minutes or until only partially cooked. Apples should be firm not fully cooked.

Mix batter in medium bowl , then pour batter over apples in the same skillet and place in oven
Bake for 10 minutes.
Remove from oven and add butter- distributed across the top and sprinkle with brown sugar
Return to oven and bake an additional 10 minutes

Remove, let cool for 5 minutes, slice into serving size pieces serve

Note if you do not have a skillet with rounded sides, you can use a conventional straight sided skillet. The only thing affected is appearance and how the pancake rises when cooking. Taste is the same
