2 CUPS Flour
2 CUPS Sugar
2 TEASPOONS Baking Soda
1 TEASPOON Salt
1 1/2 teaspoons Cinnamon ( Leave out for Wilma )
1 1/2 cups Wesson Oil
4 Beaten Eggs
3 cups finely grated Carrots
1 teaspoon Vanilla

ICING
1 stick Butter
1 - 8 oz. Cream Cheese
1 bag Confectioner Sugar
1 teaspoon Vanilla

Directions:
Directions:
Combine Flour, Sugar, Baking Soda, Cinnamon, & Salt. Add Wesson Oil, Beaten Eggs, Carrots, and Vanilla. Mix well; Divide among 3 - 8 inch cake pans, or 1 9 X 13 oblong baking pan.
Bake 350º 25 to 30 minutes or until toothpick in center comes out clean

CREAM CHEESE ICING for Carrot Cake
Mix soften Butter, Cream Cheese, Confectioner Sugar and Vanilla until creamy, iced cooled cake
