1/2 tsp. salt
16 tbsp. unsalted butter, softened
3/4 C. granulated sugar
1/2 C. confectioners' sugar
2 large egg yolks
2 tsp. vanilla extract

Whisk flour and salt in bowl. In a stand mixer fitted with paddle, beat butter, sugar, confectioners' sugar at medium speed until light and fluffy (1 to 1 1/2 minutes). Add eggs yolks and vanilla and beat to incorporate, (15-20 seconds). Add flour mixture to egg mixture until it forms a dough, (25-30 seconds). Dough will be soft but should not be sticky. Chill for 15 minutes. Divide the dough and working with half of the dough, roll into a log about 6" long and 2" thick. Wrap each log in plastic wrap and refrigerate for at least 2 hours or up to 3 days. You can wrap each log in additional layer of aluminum foil and freeze for up to 1 month. Let log thaw in refrigerator for 24 hours. Preheat oven at 325 degrees. Line a baking sheet with parchment paper. Unwrap log and cut log in half and place one half back in refrigerator. Cut first half into 1/4" thick slices. Turn the log with each slice to prevent it from crumbling. Bake until edges begin to brown, 14 minutes. Cool. Transfer cookies to wire rack and cool completely. Repeat with remaining logs.
