Ingredients: 4 pounds potatoes ...peeled, cooked, salted 1 onion, cut fine or blended 6-8 boiled eggs, chopped 1 c. celery chopped fine 1/2 green pepper (optional) 2/3 jar or less of Salad dressing (not mayo, just regular salad dressing,the pint jar.) Prepared mustard (yellow) to taste, maybe 1 tsp. or so 1/2 - 3/4 of a small can of evaporated milk, just enough to make the dressing runny but not too thin. Sweet pickle relish about 1 T. or so, taste and add more if you need

Directions:Salt potatoes, if not salted enough when cooking. Combine all 8 dressing ingredients and pour over potatoes, mix well. If you use mayo, add a bit of vinegar, it’s not as tart as salad dressing. Best made the night before. |

Notes: GRANNY SAYS......Omg! Mom’s potato was always to die for! She made the best, I could never duplicate it even when she would tell me what to put in it. So she had this big, humongous recipe of her’s that the church ladies always made for functions, I tried my best to cut it down, it’s still a large bowl of potato salad. But if you can get it to turn out like mom’s you will eat every last potato! No one else’s potato salad ever held a candle to her’s in my world.......
