2 cups sifted flour
2 teaspoon baking powder
1/2 teaspoon salt
2/3 cup shortening
1 1/4 cup sugar
1/2 teaspoon vanilla
1/2 teaspoon almond extract
1 egg
3/4 cup well-drained crushed pineapple
1/2 cup finely chopped coconut

Directions:
Directions:
Sift together flour, baking powder, salt. Cream shortening, sugar and extracts. Beat in egg and beat until mixture is fluffy. Blend in pineapple and dry mixture. Drop by teaspoon on ungreased cookie sheet 3 inches apart. Sprinkle with coconut. Bake at 325 degrees about 20 minutes. Cookies are better after being stored for 24 hours.
