1 1/4 c flour
1 tsp baking soda
1/2 tsp baking powder
1 c butter or margarine
1/4 c granulated sugar
3/4 c packed brown sugar
2 eggs
1 tsp vanilla
1 small pkg instant vanilla pudding
3 1/2 c quick oats
1/2 c chopped nuts
1/2 to 1 c raisins (optional)

Directions:
Directions:
Mix flour, baking soda and baking powder in a bowl; set aside. Combine shortening, sugars and pudding mix in a large mixing bowl until smooth. Beat in eggs and vanilla Gradually add flour mixture until blended. Mix in oats, raisins and chopped nuts. Drop onto an ungreased cookie sheet. Bake at 350º for 9-12 minutes. Do not over brown.
