"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Beat butter and sugar with a medium speed mixer until creamy and light yellow (about 3 minutes)
Beat in eggs and vanilla extract When blended, add flour mixed withbaking powder and salt. About 1/2 at a time blending between additions.
Fold in the pecans. Divide the dough in half, roll into logs and place each log onto a sheet of plastic wrap or waxed paper. Refrigerate for at least two hours. Preheat oven to 375 degrees . Remove one log from the fridge at a time, unwrap, and cut into thin 1/4 inch slices
Put the cookies on nonstick baking sheets and bake for 8 to 10 minutes
CHOCOLATE DIP
Place the chocolate chips and paraffin in a small very heavy sucepan on the lowest temerature. Stir often-it will seem nothing is happening , but don't turn up the heat. After a while the chips and wax will start to melt and blend together forming the traditional shiny chocolate candy coating. Place a cookie sheet covered with a sheet of waxed paper on the table by the pot, tip the pot and dip each cookie in about halfway. Give it a quick shake and put it on the waxed paper to dry. It is best to put the whole sheet in the fridge as then the cookies peel of the waxed paper easily.
