Grandma Terry's Famous Banana Nut Bread Recipe

Ingredients: 1 cup mashed bananas (thank you, Erin) 1 cup sugar 1/2 cup shortening ( vegetable oil works best) 1 egg pinch salt 1/2 tsp nutmeg 1 cup flour 1 tsp baking soda 1 1/2 tsp vanilla Nuts to taste ( we use about 1 cup pecans)

Directions:Blend sugar, shortening and egg. Add remaining dry ingredients. Add mashed bananas and nuts.
Pour into a prepared loaf pan. Sprinkle mixture of sugar and cinnamon on top to create a crunchy top.
Bake at 350 degrees for an hour. Erin bakes hers for only 45 minutes. Erin also makes muffins out of the bread mix when the boys are in too great a hurry to wait. Bake for 20 minutes. Aunt Carolyn suggested using mini muffin tins for bite size muffins. That sounds like a great idea, too. |

Notes: This is definitely the dessert highlight of my childhood. Nothing compared (except maybe apple pie) to the aroma that came from the banana bread baking. There were days when my mother had off from teaching school that I did not, going to a Catholic school. I loved coming home those days, knowing Mom would be home (as well as Dad) and would probably have a banana nut bread waiting for me...and a cup of tea. All was well in my world. I hope that my children and grandchildren will have that same memory of this wonderful banana bread. It is the essence of home, family and love.
