8-10 red potatoes
6 hard boiled eggs
1 bunch green onions (scallions)
stuffed green olives
real mayonnaise
mustard
salt and pepper
paprika

Directions:
Directions:
Boil 8-10 red potatoes until fork tender (do not overcook or let them get mushy)
Peel off skins and place in refrigerator until cold. Then cut into small cubes.
Boil eggs until hard, peel and cool and cut into small pieces with potatoes. Add 1 small bunch of green onions with greens, chopped small and stuffed green olives (what ever amount you like) chopped very small into potato /egg mixture.

In separate bowl mix:
1-1 1/2 cups mayonnaise
1-2 Tbs. olive juice
dab of yellow mustard
salt and pepper to taste

mix sauce with potato and eggs until it is well coated. Taste, add more mayo, s&p until it is to your liking.

Top with sliced stuffed green olives and sprinkle with paprika. Better when it sits a couple of hours in refrigerator or over night before serving
