1 cup shortening
1 1/2 cups sugar
3 eggs
1 teaspoon vanilla extract
3 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 9oz box None Such condensed mincemeat

Directions:
Directions:
Preheat oven to 375ºF. In large mixing bowl beat shortening and sugar until fluffy. Add eggs, beat well. Stir in vanilla extract. Stir together dry ingredients, gradually add to shortening mixture. Mix well. Stir in crumbled mincemeat. Drop by teaspoonfuls 2 inches apart onto cookie sheet.( you can grease the cookie sheet or even better place parchment paper on the bottom.)Bake 8-10 minutes or until lightly browned on the bottom.

Nanny got this from the box of None Such mincemeat "Prize Cookie" recipe. She added vanilla and lots of extra homemade love when she made these. Of course, keeping them in the old cat cookie jar added something special, too. Considering it was always full, she must have made countless dozens over the years.

I still have and use the small gray melamine bowl she used when making these.
