Ingredients: In a large bowl with mixer on low beat together until just mixed: 1 C packed Brown sugar 1 ¼ C Molasses 3 Eggs 1 C butter, softened 1 TBS Baking soda 1 tsp Salt 1tsp ground Allspice 1 tsp ground Cinnamon 1 tsp ground Cloves 1tsp ground Ginger 3 C all-purpose Flour

Directions:Constantly scrape the bowl with a rubber spatula and then increase the speed to medium and beat for another 2 minutes. With a wooden spoon stir in 5-6 MORE CUPS of flour to make a stiff dough. Divide the dough in half and wrap in plastic, either use immediately or within 2 days.
Preheat oven to 350°. On a lightly floured surface roll out one half of the dough to between ¼ and ⅛ inch thick. I usually roll it out between two large sheets of wax paper so I don’t have so much flour everywhere. With a cookie cutter cut out as many as possible. Carefully arrange them on a lightly greased baking sheet and bake for about 12 minutes or until they are lightly brown. Immediately loosen from the sheets and transfer to wire rack to cool. Repeat with remaining dough and re-roll the scraps.
If making gingerbread man shaped cookies cut a raisin in half and press the edges around with a toothpick to make the eyes before baking. Then decorate with icing after they have cooled. |
