Ingredients: 6 cups sugar 1/2 cup soft butter 8 eggs, beaten well 1 tsp. salt 1 tsp nutmeg 2 tsp cinnamon 1 tsp allspice 1 tsp ground cloves 2 cups chopped pecan 8 to 10 cups flour

Directions:Mix sugar, butter and eggs. Add the seasonings and pecans. Work in the flour. (You may use a pastry blender, dough is very thick). Finish mixing in flour by using hands to get together. Roll dough, small pieces at a time, on a floured board and cut in 1/2-inch wide strips, about as long as a pencil. Brush with beaten egg. Bake about 12 minutes until slightly brown at 375º F for 12 to 15 minutes. |

Notes: These are a traditional Castroville, Texas Christmas cookie and I have many fond memories of baking these during the holidays. They get hard and are great dunked into milk or coffee. While you can form dough into any shape, it is traditional to create pretzel shaped cookies. Recipe can easily be halved and still have plenty of cookies! Recipe implies that the dough strips are flat, but I lightly rolled each strip between my fingers or on floured surface and formed them into thin "sausage-rolls." Cutting them into similar lengths will ensure they all cook evenly.
