"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Ingredients:
Ingredients:
2 heads of cabbage
1 cup raw rice
1 cup water
1 lb ground beef
1 medium onion, chopped
3 tbsp oil
2 tsp salt
1/2 tsp black pepper
1/2 tsp paprika, optional
1-48oz can tomato juice

Directions:
Directions:
In a sauce pan, bring rice and water to a boil. Turn off heat, cover and let stand for 10 minutes.

In the meantime, soften the cabbage leaves by coring the cabbage then putting the whole head in a large pot of boiling water. As the leaves soften and fall off the cabbage head, remove them to a tray to cool.

When rice is ready, remove it to a large mixing bowl and cool slightly. Sauté the onions in the oil until tender. Add the meat, onions and seasoning to the rice. Mix well (using your hand works the best)

Trim hard centre vein off each leaf. Put a heaping 2 tbsp of rice mixture on each cabbage leaf and roll, place seam side down in roasting pan. ( a deep pan is best for several layers) Pour tomato juice on rolls, then top them with left over leaves. Cover roaster.

Bake at 350º for 2 - 21/2 hours.

Makes 24 rolls.
