8 medium potatoes (boiled)
3/4 c. finely diced celery
1/2 c. finely diced onion
2-4 hard boiled eggs
Dressing:
4 slices of bacon fried crisp(reserve drippings)
1/2 c. vinegar
1/2 c. water
3/4 c. sugar
1 tsp. salt
1/2 tsp. pepper
2 tsp. prepared mustard
2 eggs beaten

Directions:
Directions:
Hard boil 2-4 eggs. Boil 8 medium potatoes, when tender remove, cool peel and dice. Place potatoes in a large bowl, add celery, onion and chopped hard boiled eggs.
Dressing:
Fry bacon until crisp, remove the bacon, to the bacon drippings add water, vinegar, sugar, salt, pepper, mustard and beaten eggs. Cook until thick about 10 minutes. Pour over the potatoes and vegetables. Crumble bacon over the top and chill until ready to serve.
