2 eggs, beaten
1/2 cup brown sugar
1 1/2 cup granulated sugar
1 cup vegetable oil
2 tsp. vanilla
2 1/2 cup plain flour
1 Tbsp. baking powder
1 tsp. soda
1 tsp. salt
2 cups grated zucchini; do not peel,cut off ends and grate fine
1/2 cup cocoa

Directions:
Directions:
Beat eggs and sugar together until creamy. Add oil and vanilla and stir by hand. In separate bowl sift together flour, baking soda, salt, cinnamon, and cocoa. Add flour mixture to eggs and oil mixture and stir until stiff. Fold in the zucchini.

Grease and flour two loaf pans. Bake in loaf pans for one hour at 350º or 325º for non-stick coated pans.
