1 cup butter
1/2 sifted powdered sugar
3 tsp. lemon juice
2 cups flour
1/4 tsp. salt

Filling:
1 egg slightly beaten
grated rind of lemon
2/3 cup sugar
3 Tblsp. lemon juice
1 1/2 Tblsp. softened butter

Directions:
Directions:
Heat oven to 400º. Cream butter and sugar. Sift and measure flour. Add other ingredients. Mix well. Measure 1 tsp. dough. Bake 8-10 minutes on ungreased cookie sheet. Remove carefullly to cooling rack.

Filling: Place ingredients in top of double boiler. Cook over hot water till thick, stirring constantly. Put filling between two cookies and roll it in powdered sugar.
