1/2 C. shortening
1 1/4 C. sugar
3 eggs
1 1/4 C. flour
1 C. + 2 Tbsp. milk
3 C. fresh rhubarb, cut
1 tsp. vanilla
dash of salt

Directions:
Directions:
Preheat oven to 375º

Cream shortening and 1/4 C. sugar. Separate one egg and keep white aside. Add 1 egg yolk, flour and 2 Tbsp. milk. Mix well. Take dough and pat onto bottom of baking dish. Put rhubarb over crust.

Mix remaining egg white, eggs, milk, sugar, vanilla and salt. Pour filling over rhubarb.

Bake for 45 mins.
