2 1/4 c. all purpose flour
1 tsp. baking powder
2 tsp. ground cinnamon
1 1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 tsp. ground ginger
1/4 tsp. kosher salt
1 c. dark brown sugar, lightly packed
1/4 c. vegetable oil
1/3 c. unsulfured molasses
1 extra large egg or 2 medium at room temperature
3/4 c. chopped crystallized ginger
Raw sugar for dusting

Preheat oven to 350º. Line 2 cookie sheets with parchment paper
In a large bowl sift the flour, baking soda, cinnamon, cloves, nutmeg, ginger, and salt. In a large bowl with a mixer beat the brown sugar oil and molasses on medium speed for about 5 minutes. Turn the mixer to low and add the egg and beat for a minute making sure to scrape the side of the bowl so as to mix completely. Add the dry ingredients slowly to mix it all well. Do not over work the dough. Stir in the crystallized sugar
Scoop the dough with a small cookie scoop and roll into a ball in your hands then flatten slightly and dip in the raw sugar. Place onto the cookie sheet.
Bake for 13 minutes. Let the cookies cool. They will be cracked in appearence
