2 C milk
3/4 C sugar
1/4 tsp salt
1 T butter
2 eggs separated
1/4 C flour
1 tsp vanilla

Meringue:

3 egg whites
1/3 tsp Cream of Tarter
1/4 C sugar
1 tsp vanilla

Directions:
Directions:
1. Mix sugar, flour and salt in a saucepan.

2. Gradually add milk and cook until thick. Stir constantly.

3. Separate eggs. Put yolks in a small dish and add 3 to 4 T of the hot cooked mixture. Then add to hot mixture.

4. In pan, cook about 1 to 2 minutes more, stirring constantly. This will make it a littler thicker. Remove from heat and add 1 T butter and the vanilla. Cool.

MERINGUE:

Beat 3 egg whites with 1/3 tsp Cream of Tarter. Make stiff peaks with your beater. Gradually add 1/4 C sugar. Beat more. Add 1 tsp vanilla. Spread over pie, making sure you go clear to the edge of the crust so that it will seal.

Note: You can make this chocolate by adding 1/4 C cocoa to the yolks and 3 to 4 T hot cooked mixture, making sure to stir the lumps out of it before adding to mix in sauce pan. To make it coconut, substitute coconut flavoring for vanilla. Add flaked coconut. Cook on medium heat as it will scorch easily.

Also, If you are making a pie, use the egg whites, plus 1 more for the meringue.
