1 1/4 cups confectioners sugar
1 cup + 2 tbsp salted butter, room temperature
or unsalted + 1/2 tsp salt
1 large egg yolk (reserve the egg white)
1/2 tsp salt
1 tsp vanilla extract
1/2 tsp almond extract
2 3/4 cup all purpose flour

1. Combine sugar, butter, egg yolk, salt and flavorings; beating until smooth. Add the flour, mixing until smooth. The mixture may seem dry at first, but will suddenly come together. If not, dribble 1 tsp - 1 tbsp water and mix.
2. Divide the dough in half, shaping each half into a flattened disk. Wrap in plastic and refrigerate 2 hours, or overnight. When ready to bake, remove the dough from the refrigerator and allow to soften for about 20 - 30 minutes. It should still feel cold, but soft enough to roll out.
3. Sprinkle work surface and rolling pin with flour. Working with one piece of dough at a time, roll it 1/8 to 3/16 inch thick. Use a cookie cutter to cut shapes. Re-roll and cut the dough scraps. Place the cookies on ungreased, or parchment lined, baking sheets. They can be close together since they will spread very little.
4. If decorating with colored sugar etc. mix the reserved egg white with 1 tbsp water. Lightly paint the cookies with the egg white / water, then sprinkle with colored sugar or other decorations and bake.
5. Bake in a preheated 350º oven for 12 - 14 minutes, until they are set, and barely browned around the edges. Remove from oven and cool on the pan, or lift the parchment paper with the cookies off the pan.
6. Repeat with remaining dough.
