1 cup (2 sticks) unsalted butter
1/2 cup confectioners sugar
1 1/2 tsp vanilla extract
1 tsp salt
3/4 cup almond flour
2 1/4 cups all purpose flour

Topping:
1/2 cup confectioners sugar

Directions:
Directions:
1. In a large bowl, cream together the butter, sugar, vanilla and salt until fluffy. Beat in the almond flour, then the all purpose flour. Cover the bowl and chill the dough for one hour.
2. Preheat the oven to 325º. Lightly grease (or line with parchment paper) two baking sheets.
3. Break off about one inch pieces of dough, using a teaspoon scoop if desired, and roll into balls. Place the balls on the prepared baking sheets, leaving 1 inch between them. Bake the cookies for 15 - 20 minutes until they appear set, and are just starting to brown.
4. Sprinkle the topping sugar in a shallow bowl or pan. Remove the cookies from the oven and transfer, a few at a time, to the bowl or pan. Roll them in the sugar to coat, then transfer to a rack to cool.
5. When the cookies are cool, roll them in confectioners sugar again; they should be completely coated and snowy white.
