5 lbs potatoes, boiled, cooled, peeled and diced
1/2 onion minced
3/4 cup white vinegar
1 cup Mayo
olive oil
Salt, pepper, parsely
5 boiled eggs sliced

Directions:
Directions:
after boiling, cooling, peeling and dicing potatoes, put them and the minced onion in a mixing dish and put vinegar on them. Toss them so they soak it in. Add mayo, and a little olive oil in case they still look dry after the mayo. Add salt and pepper, garnish with parsley and sliced hard boiled eggs and allow them to sit overnight in the fridge for the flavors to blend.

Mix in more or less mayo. Use white pepper instead of black pepper if you want. I've even added garlic powder in the past. They're potatoes for heavens sake... how far wrong do you go?
