Ingredients: 1 c. oat bran, dry and not cooked 3/4 c orange juice 1 c. plus 1 Tbs. applesauce, unsweetened 2 T. canola oil 1 c. honey 1/3 c brown sugar, packed 3 extra large eggs 2 Tbs. pure vanilla 1 Tbs. grated orange rind or 2 tsp. orange extract 3 c. whole wheat pastry flour, or half and half whole wheat and all purpose flour 1 Tbs. baking powder 1 1/2 tsp. baking soda 1 c. powdered milk 2 1/2 c. oats, quick or old fashioned 1 c. nuts, chopped 1 c. raisins, craisins, dates, or chocolate chips 1 c. ground flax seed, optional

Directions:Preheat oven to 375 F. Grease 9"x13" cookie sheet. Mix oat bran and orange juice in a small bowl, set aside to soak for 10 minutes. Combine in a large bowl and mix until smooth applesauce, oil, honey, brown sugar, eggs, vanilla, orange rind. Measure or spoon flour, baking powder and soda over applesauce mixture. Add soaked oat bran and remaining ingredients to large bowl and mix thoroughly with strong wooden spoon. Drop cookie dough by slightly heaping tablespoons or small ice cream scoop onto cookie sheet 1" apart. Bake 12-14 minutes or until lightly browned. Cool on wire rack. |
