4 tbsp. flour
1 cup sugar
1 cup boiling water
2 egg yolks well beaten
1 tsp. lemon extract
3 tsp. cider vinegar



Directions:
Directions:
Mix flour and sugar together, add boiling water, cook about 5- 8 minutes. beat egg yolks well. Add a small amount of hot liquid to egg yolks then return to pan and cook 2-4 minutes, then add lemon extract and cider vinegar. place plastic wrap on top to prevent skin from forming. After cool pour into cooled prebaked pie crust. Beat egg white to make meringue. See recipe under miscellaneous. Bake in oven until meringue is golden brown.
