One roast beef, top or bottom round
garlic salt and cracked pepper
olive oil for browning roast
water
flour for gravy

Liberally salt and pepper the roast. Add olive oil to a skillet and brown roast on all sides. Transfer roast to deeper casserole that has a lid. (Make sure to save skillet with pan drippings!) Add water to cover roast and put the lid on casserole. Bake in 350º oven for maybe 2 hours.

Gravy: Remove roast from the water and place on a cutting board to rest. Now, brown flour in skillet with pan drippings. This roux will take 20-30 minutes to brown...go slow! When flour is dark brown, slowly add the water used to poach the roast. This will take maybe 15 minutes. Slice the roast across the grain and add into the thickened gravy.
