2 c. flour
1 tsp. baking soda
1 tbsp. cinnamon
1/2 tsp. salt
1 c. butter, softened
1 c. coconut flakes (optional)
1 c. sugar
1 c. light brown sugar
2 eggs
1 tsp. vanilla
2 c. oatmeal

Directions:

1. Sift flour with baking soda, cinnamon and salt.

2. In large bowl, bet in flour mixture until well-combined. Stir in oats to make a stiff dough and add coconut.

4. Preheat oven to 375º. Drop dough by rounded teaspoons 2" apart on a lightly greased cookie sheet. Bake 12 to 15 mins. Let stand for 2 mins. before removing to the cooling racks.
