2-1/2 pounds russet potatoes
5 heaping tablespoons sweet pickle relish
3 tablespoons pickle juice
1/3 cup mayonnaise
1/3 cup yellow mustard
3 hard boiled eggs finely diced
Salt and pepper

Directions:
Directions:
Peel and cut up potatoes in small cubes. Boil potatoes in salted water 10 to12 minutes, or until just tender. Drain the potatoes and mash as you would mash potatoes. In a bowl, combine relish, mayonnaise and mustard and finley chopped boiled eggs. Mix well and add to potatoes mixing all together. Stir in salt and pepper to taste.
Serves 8
