1.5 C + 1 T all-purpose flour
1/4 C unsweetened cocoa powder
1 t baking soda
1/4 t salt
1/2 C unsalted butter, room temp
3/4 C light brown sugar
1/4 C sugar
1 egg, room temp
1 T milk
2 t vanilla extract
2.5 t red food coloring
1 C semi-sweet chocolate chips

Toss the flour, cocoa, baking soda and salt together in a bowl. Set aside

Using a mixer, beat the butter on high until creamy, about 1 min. Scrape the sides and the bottom of the bowl as needed. Switch to medium and beat in the brown sugar and granulated sugar until combined. Beat in the egg, milk and vanilla, scraping down the sides and bottom as needed. Once mixed, add the food coloring and beat until combined. Turn the mixer off and pour the dry ingredients into the wet ingredients. Turn the mixer low and slowly beat until a very soft dough is formed. Add in the chocolate chips. The dough should be sticky.

Cover the dough tightly and chill for at least 1 hour. THIS IS MANDATORY.

Preheat the oven to 350º. Line the baking sheets with parchment.

Scoop 1.5 T of dough and mold in to a ball. Place them widely. Bake for 10-11 minutes. The cookies may not spread very much, which is OK. Just press on them to flatten and crinkle. Stick a few choc chips on top of warm cookies. (OPTIONAL)
