o 3 large egg whites
o 2/3 cup sugar
o 1/8 teaspoon salt
o ½ cup (1 stick) unsalted butter, melted and cooled slightly
o ½ cup all-purpose flour
o 1/3 cup finely ground blanched almonds
o ¼ teaspoon vanilla or 1½ teaspoons fresh lemon juice

1. Preheat oven to 350 degrees. Line 2 cookie sheets with parchment paper; set aside.
2. In a medium bowl, stir together the egg whites, sugar and salt.
3. Stir in the butter, flour and ground almonds, one at a time, beating until blended after each addition. Stir in the vanilla or lemon juice.
4. Drop by tablespoonfuls about 4-inches apart onto prepared cookie sheets.
5. Bake until the edges are golden brown, about 10 minutes.
