1 c icing sugar
1/3 c water
2 tbsp unflavored gelatin
1/3 c water
1/3 c white corn syrup
1 1/3 c sugar
1/2 tsp peppermint extract
1 tsp red food coloring

Grease a 8 inch square pan with Pam and dust with 1/4 cup icing sugar, including sides.

Pour 1/3 cup water in large stainless mixing bowl, sprinkle gelatin over and allow it to soften for 15 minutes. In medium saucepan over medium heat, combine 1/3 cup water, corn syrup and sugar. Stir to dissolve sugar. Bring to a boil and cook for 4 minutes.

Using electric mixer, on low speed, slowly pour the hot syrup in to the gelatin in a thin stream down the side of the bowl. Gradually increase the speed to high and continue beating for 5 to 6 minutes or until the mixture has tripled in volume and very thick and glossy. Add extract and continue to beat until combined, about 15 seconds.

Scrape mixture into prepared pan. Using damp fingers (as the mixture is sticky) level and smooth the top. Sprinkle food coloring on top and using a skewer or toothpick marbleize food coloring throughout.

Allow to stand at room temperature for 1 hour. Using a sieve, dust the top with 1/4 cup icing sugar and allow to set overnight.

Place remaining 1/2 cup icing sugar in small bowl. Unmold marshmallow onto a cutting board. Lightly oil a sharp knife and cut into 2 inch squares. Roll in icing sugar to coat.
