3/4 Cup of Butter
1 Egg Yolk
1 Tsp Vanilla
2 Cups of Flour
1/4 Cup of Sugar
1/2 Cup Crushed Peppermint, ( Thankfully you can get already crushed peppermint in a bag)
Small amout of chocolate chips

Directions:
Directions:
Pre-heat oven to 350ºF
Mix butter and sugar and vanilla until well blended
Add flour 1 cup at a time
After all ingredients are mixed well, add peppermint candy
Roll into small balls, roll in egg white, then sugar and put a chocolate chip on the top.
Bake about 8-10 min. Immediately take cookies of baking pan and onto cooling rack.

I remember as a little girl going to Gm and Gp's house for Christmas and there would be an abundance of awesome Christmas Cookies. These were and still are my favorite cookie.
