Gram's Gnocchi Recipe

4 C potato buds
5 T. butter
1 tsp. salt
4 C boiling water
4 eggs (beaten slightly)
6 C flour (more if necessary)

Butter or Sauce for Serving
Romano Cheese for Serving

Directions:
Directions:
Put potatoes in bowl. Melt butter in boiling water. Add salt. Pour into the potatoes. Cool. Add eggs slightly beaten. Add 1/2 flour at a time to potato mixture. Mix well. Add more flour. Mix well. Pour some flour on work table and knead a few minutes using more flour if necessary. Break off a piece at a time and roll into 1/2 inch rope. Cut into small pieces and mark with a fork. When finished put on a tray to freeze and once frozen put into plastic freezer bags or containers. Cook in boiling water for about 5 minutes. Drain and put favorite sauce or butter on them and serve. Makes 4-4 1/2 lbs.

These were in all three sister's (Rosie, Angie and Theresa's) recipes. They are a favorite of Theresa's great grandson Zach's. Theresa's son-in-law, Jack, calls them lead belly dough balls jokingly. They are requested every time Theresa comes to Dayton. It is also a favorite of her other great grandson's, Patrick Stopperich. His wife, Tabatha said that "a few years ago, Gram made bags of frozen gnocchi for everyone to enjoy. Patrick, being the food lover he is, could not wait for dinner time and decided to cook a extra large appetizer before I got home from work. He got so excited to taste this special homemade treat that he hard boiled the entire bag for entirely too long. He turned the whole pot into a bowl of mush but still proudly ate it and left one dirty dish for me to clean. I love the note that Angie had with the recipe pictured above!
