1-1/2 cups unsalted butter, room temperature
3/4 cup powdered sugar
2 teaspoons vanilla extract
2 teaspoons almond extract
3-3/4 cups flour
1-1/4 teaspoons salt
3/4 cup raspberry jam

Directions:
Directions:
Preheat oven to 325º. Beat butter in large bowl until light. Gradually beat in powdered sugar. Beat in extracts. Add flour and salt and stir just until combined. Gather dough into ball; divide in half. Flatten each into disk and wrap in plastic and refrigerate until firm, about 1 hour.

In this recipe, you cut out two sets of cookies in same shape. One set will be the base of the cookie, the second set has a cut out in center

Line baking sheets with parchment paper. Roll out 1 dough disk on lightly floured surface to 1/8 inch thickness. Cut out cookies. Place one set of cutout cookies on baking sheet. Spread 1 teaspoon jam in center of each cookie.
