1 cup peanut butter (crunchy or smooth, your choice!)
2/3 cup granulated sugar
1 banana, mashed

1/2 cup nutella

Preheat oven to 350 degrees.

Mix peanut butter, sugar, and banana until smooth. Drop by rounded spoonfuls onto a cookie sheet. Flatten cookies with a fork as they will not expand too much in the oven.

Bake for 8-11 minutes. Pull before they turn golden brown on the edges. These get tough quickly if they are overbaked. Let cool on cookies sheet for 4 minutes before moving to a rack.

Optional* After the cookies cool, spread 1/2 teaspoon nutella onto each cookie. Place another cookie on top to finish the sandwich.
