1 stick butter, softened
1/2 cup dark brown sugar
1/2 cup granulated sugar
1 egg
2 tsp vanilla
1 1/2 cups all purpose flour
2 tablespoons cocoa
1 tsp baking soda
1/2 tsp salt
1 cup dark chocolate chips
Directions:
Directions:
Preheat oven to 375. Beat sugars and butter until light and fluffy. Add egg and vanilla. Mix together flour, salt, cocoa, and baking soda. Add to wet ingredients and mix well. Stir in chocolate chips. Place in refrigerator for 20 minutes. Bake for 8-10 minutes.

My first year of teaching was emotionally draining. The best part of the week was Friday night because it was always the most amount of time I would have away from school and my wonderful* students. By Sunday night, I started feeling sick to my stomach as I dreaded Monday morning. I labeled Sunday night as Cookie Night because it was the only way to get through that difficult first year. Eventually, I became a better teacher and, expectantly, better at making cookies. I double the vanilla and baking powder and refrigerate the dough 20 minutes before I cook it. Yum!
